Greek Nachos with Tzatziki Recipe


 

I don't claim to be a great cook, but when my husband goes back for seconds, I know I've done something right.  When he says, "You need to cook this again," I know it's really good.  This is an easy recipe that doesn't take a ton of ingredients, but it's packed full of fresh flavor.

Here's what you need:
 
 
1 pkg Pita pockets(I prefer whole wheat)
1 small can of olives(chopped, whole, whatever you like)
2 tbsp Extra Virgin Olive Oil
8 oz Light Sour Cream
6 oz Light Greek Yogurt
2 tbsp fresh dill, finely chopped
Juice of 1 lemon
1 Cucumber, chopped(take about 1/8 and chop it up nice and tiny)
1 Medium tomato, chopped (or a handful of cherry tomatoes)
1 lb ground meat(turkey, chicken, beef, or lamb)
1 tsp ground cumin
1 tsp minced dried onion(or fresh onion)
1 small pkg Feta cheese
 
Note:  The toppings are up to you.  If you love olives, by all means, add more olives.  Don't like tomatoes?  Forget them!  Red onion would be pretty tasty in this dish.  Why not?
 
Combine sour cream, yogurt, dill, lemon juice, 1/8 finely chopped cucumber, and about 1 tsp olive oil to make tzatziki sauce.  Place in the refrigerator. 
 Brown your ground meat, adding cumin and onion to taste.  I used turkey because I had some we bought in bulk and cooked several portions and separated them into 1 lb bags for the freezer.

   Brush both sides of your pitas with a small amount of olive oil and toast in the oven for a few minutes, flipping it over once.  Cut into wedges
 Once you've got all your veggies chopped, that's it!  Pile it on how you see fit and enjoy!

Crockpot Potato Soup

Here's an easy crock pot recipe that will warm up your belly on a cold night.  Yummy!
1 pkg(30 oz.) frozen shredded potatoes
1 Can cream of chicken soup
3 cans chicken broth
0.5 tsp ground onion
2 tbsp real bacon bits
1 cup sour cream
1 8 oz pkg cream cheese
1.5 cups shredded cheddar cheese
Salt to taste

Add potatoes, chicken soup, chicken broth, and onion to crock pot.  Cook on high for 4 hours or low for 6-8 hours.  The last hour of cooking, add remaining ingredients and turn down to low(if you were cooking on high.)  Stir occasionally.

Shop Smart!

There are a few tricks that I use to shop frugally.  It can add up really quick.

1.  Before you go to a store, check out retailmenot.com and see if you can print out a coupon.  They also have discount codes if you are shopping online. 
2.  If you are about to go grocery shopping, or to a superstore, check out www.southernsavers.com.  She will have a list of everything that is on sale for most of the local stores and the coupons that match the deal(for extra savings!)  She will also have links to print out coupons.
3.  Before you visit a website, sign in through shopathome.com and often times you will get a percent of your purchase back in cash!  Just look up the store's name up top, and it will show you what coupons or codes are available.  Click there, or just click "shop now."
4.  Price check.  I always check ebay.com and amazon.com for prices when I see something on sale at another website.  Sometimes that "great deal" you think you're about to get isn't that great.

A few minutes of planning before you shop can make a lot of dollars' difference!
